Spring is here and Foxhollow Farm invites you to celebrate with our 2^nd Annual Spring Festival May 19, noon-5pm. Enjoy a day of live music, farm fresh food, and activities for the whole family! Proceeds benefit the Gilda’s Club Louisville and Foxhollow’s educational programs. Admission is free with food and some activities available for purchase. Parking is $5 and carpooling is highly encouraged.

So you’ve ordered by bees and set up your hive. Now what? In this class Carrie VanWinkle will provide you with the important how-tos of the first year of beekeeping. Weather permitting we’ll do a hive inspection. Carrie will teach us what the bees are doing, bee behaviors (including signs of swarms), important things to know about honey bee biology, the four products of the hive and their purpose, and identifying issues in the hive and natural approaches to addressing them. Bluebird Trail at Foxhollow Farm with Phil Tamplin

Bird expert, Phil Tamplin, installed Bluebird houses on our farm to help increase their population! While installing his homemade birdhouses, we inspected boxes that were already on the farm and were delighted to find bluebirds and numerous eggs. “Thank You” Phil for your thoughtful care to the birds of KY. Foxhollow Farm Helps Rebuild Daisy Hill, IN After Tornado

Members of the Foxhollow Farm team, and one of our supportive neighbors, took a trip to Daisy Hill, Indiana. This small town suffered substantial damage from the tornado in early March. We donated dog & cat food, hay bales, fencing and farming tools. “Thank You” to the Daisy Hill community for allowing us to take part in your rebuilding. You are an inspiration to all.

Old Fashion Beef Stew

The crock pot, a simple dinner solution. Prepare in the morning and come home to a delicious meal. Enjoy with friends and family for best results. Serves 6 to 8.

Ingredients

2 lbs. Foxhollow Beef Stew Meat*
1 bay leaf*
1 tbsp. Bourbon Barrel Soy Sauce*
4 cups beef broth
1/4 tsp. Bourbon Barrel Pepper*
1/2 tsp. salt*
1 tsp. honey (Harry Jones honey bears!)*
1 lb. Carrots*
1 lb. Yukon Gold Potatoes
15 (8oz. bag) pearl onions
2 Parsnips
1/4 cup Arrowroot
1/4 cup water
1 10 oz. bag green peas

Preparation

In a crock pot, combine the beef, bay leaf, soy sauce, 1 cup of the broth, pepper, salt, honey, carrots, potatoes, pearl onions, and parsnips. Pour remaining broth over beef and vegetables. Cover and cook on LOW for 8 to 10 hours. Turn crock pot to high. Dissolve the arrowroot in water, stir into the cooking stew in the crock pot. Remove the bay leaf. Add the peas. Cover and cook on HIGH 10 to 15 minutes or until slightly thickened.

Soil Making & Seeds Sprouting at Foxhollow
