Serves 8
1 tablespoon Olive Oil
4 tablespoons butter
2 onions, diced
1 1/2 cups carrots, chopped
3/4 cup celery, chopped
2 pounds Foxhollow Farm grass fed Beef
2 cups milk
1/2 teaspoon Nutmeg
2 cups dry white wine
3 cups tomatoes, cut up in their juices
Freshly grated parmesan reggiano
Melt oil and butter in a heavy bottom pot and add the onions. Cook on medium heat until translucent, about 15 minutes. Add carrots and celery and cook for a few minutes, stirring to coat vegetables well. Add the ground beef and a large pinch of salt and freshly cracked black pepper. Crumble beef with a wooden spoon or fork and cook until browned throughout. Add milk slowly, and let simmer gently, stirring frequently, until milk has bubbled away. Add the nutmeg and pour in the wine, let simmer until evaporated. Add the tomatoes, turn up the heat and when the tomatoes begin to bubble, turn the heat down to the merest simmer for a long, long time (3 hours, at least). Stir the sauce occasionally and if the sauce dries out adding a little water is just fine. The occasional bubble breaking through the surface is perfect.
For serving, toss some of the sauce with pasta then, scoop sauce on top of the pasta and freshly grate parmesan.

Volunteer Thursdays are every Thursday from 8am to Noon. First and foremost, you should expect to have FUN! This is a great way to get some exercise, get your hands dirty and learn about where your food comes from.
Possible activities include:
Weeding
Harvesting
Transplanting
Soil and Compost Mixing
Painting
Meet us at the Veggie Shed at 8:00am or come anytime until Noon and join us in the gardens. Please, wear weather appropriate clothing, that you don’t mind getting dirty, either rain boots or sturdy shoes and bring a water bottle.

Join Foxhollow Farm and John Michael Musselman for ReWilding 101 on June 9, 2012.
It is the birthright of all human beings to live as natives upon this earth. By exploring the forest, meadows, and edges of Foxhollow Farm, we will rediscover the inherent abilities and ancestral technologies that allowed aboriginal humanity to live freely within an ever-changing universe. This class will be guided by both the interests of the group, and whatever nature has to offer in the present moment. Primary topics of focus will include: Wilderness Awareness & Movement, Wild Food & Medicine, Fire-by-Friction – DEEP NATURE CONNECTION.
This is the other elementary education ! – designed for ages 12 and older (but if you’re ready, you’re ready !)
John Michael Musselman is a Native of Oldham County and is currently an instructor at the HumaNature School in Traverse City, Michigan. He has extensive knowledge of plants, animals, and their environments and dedicates his life to sharing and growing his skills. John Michael will lead the workshop participants through the beautiful woods of Foxhollow to appreciate Nature’s wonders on every scale.

We would like to extend the class to 2pm (originally it was advertized as ending at noon.) If you can’t stay until 2, let John Michael know at the start of the class and he will make arrangements for you to come back to the Farm Store at noon.
*We can provide a sack lunch for you if you’d like for $5. Lunch consists of a PB&J OR Pasta Salad AND trail mix AND a cookie. If you would like us to make you a lunch, please email maggiegalloway@foxhollow.com by 8am tomorrow morning.

Spring is here and Foxhollow Farm invites you to celebrate with our 2nd Annual Spring Festival May 19, noon-5pm. Enjoy a day of live music, farm fresh food, and activities for the whole family! Bird expert, Phil Tamplin, installed Bluebird houses on our farm to help increase their population! While installing his homemade birdhouses, we inspected boxes that were already on the farm and were delighted to find bluebirds and numerous eggs. “Thank You” Phil for your thoughtful care to the birds of KY. Members of the Foxhollow Farm team, and one of our supportive neighbors, took a trip to Daisy Hill, Indiana. This small town suffered substantial damage from the tornado in early March. We donated dog & cat food, hay bales, fencing and farming tools. “Thank You” to the Daisy Hill community for allowing us to take part in your rebuilding. You are an inspiration to all.
